New York style cheesecake from Cooking Light

Recipe Ingredients for New York Cheesecake from Cooking Light

2/3 c flour
2 tbsp sugar
2 tbsp margarine , cut into small pieces
1 tbsp water
24 oz Cream cheese fat free
16 oz Neufchatel cheese
1 3/4 c sugar
3 tbsp flour
1 tbsp vanilla extract
1 1/2 tsp grated orange rind
1 tsp grated lemon rind
1/4 tsp salt
5 eggs

Recipe Directions for New York Cheesecake from Cooking Light

Preheat oven to 400. Place 2/3c flour and 2 Tbsp suagar in food processor and pulse 2x or until combined. Add chilled margarine; pulse 6x or until mixture resembles coarse meal. With food processor on, slowly pour ice water through food chute, processing until blended (do not allow mixture to form a ball). (I don't have a food processor I just used a pastry blender.) Firmly press mixture into bottom of a 9" springform pan coated with Pam. Bake at 400 for 10 min. Cool on wire rack. Preheat oven to 525 (or highest setiing). Combine cheeses in large bowl, beat at high speed untill smooth. Add 1 3/4 c suagar and next 5 ingredieitns. Beat well. Add eggs 1 at a time, beating well after each addition. Pour cheese mixture into prepared pan; bake 525 for 7 min (my oven only goes to 500 so I baked 10min - it was a guess)Reduce temp to 200 and bake 45 min or until almost set ( mine took longer than 45 min) remove cheesecake from oven and let it cool to room temperature. Remove outer rim of springform pan and then chill at least 8 hours. Garnish with desired fruit, lemon zest, orange slies or lemon slices if desired. I boiled down some frozen raspberries and added Splenda for a topping!
