This is a tasty, colorful easy to make crock pot soup. Recipe says that it makes 8 servings but I get more out of it than that. I use a 6 qt cooker. One serving is 2 cups.

Recipe Ingredients for New Year's Soup

16 oz dried black-eyed peas
42 oz chicken broth
29 oz diced tomatoes, onion, green bell pepper and celery added
10 oz Rotel tomatoes
1 large onion, chopped
2 cups diced turkey, deli style thick slab
7 cloves garlic, whole
1 lb chopped fresh collard greens

Recipe Directions for New Year's Soup

Wash and soak black-eyed peas overnight. Rinse and drain peas and place in bottom of crock pot. Stir in broth and remaining ingredients. Cover and cook on low 10 hours or until peas and greens are tender. Serve with hot sauce or pepper sauce if desired.
