Recipe Ingredients for New Years Black Eyed Peas

1 lb. black eyed peas, dry
1 onion
1 carrot
3 stalks celery
2 cups ham, chopped
6 cups water
2 tbs of olive oil

Recipe Directions for New Years Black Eyed Peas

Soak the dried peas overnight. Cook the onion, carrot & celery in the olive oil over medium heat for about 5 min. Add the ham and then the soaked beans. Cover with enough water to cover, add the silver dime, bring to a boil and then lower heat to simmer for about 3 hours.
