This soup has a nice spicy bite to the colorful vegetables and a great way to use the traditional New Year's black-eyed peas and greens.

Recipe Ingredients for New Year Vegetable Soup

15 oz black-eyed peas
15 oz diced tomatoes
15 oz corn
15 oz green beans
15 oz hominy
15 oz okra
24 oz greens, stewed and seasoned
6 c chicken broth
4 cloves garlic, minced
2 tbs chili sauce (sriracha)

Recipe Directions for New Year Vegetable Soup

  1. I have used both canned and fresh vegetables for this and as you would guess the fresh ingredients really zing the flavor up a notch but the canned vegetables work just as well and are convenient for a quick soup.

  2. If using fresh you will need to clean and chop all vegetables. If using frozen peas just add to crock but if using dried soak them over night and rinse.

  3. Occasionally I will put the stewed seasoned greens and diced tomatoes in the blender to create a thicker broth.

  4. In a large crockpot combine all of your ingredients and let cook on low for 3 to 4 hours.

  5. Add or subtract the chili sauce according to your hot meter.

  6. I typically serve this with sliced hard cheeses and crusty sourdough bread but the kids enjoy it with string cheese and pita bread.
