i needed *something* to put some butter on tonight after a long grueling day at school. no crackers or bread in the house so rusks are in the over. decided to use up some flour that's been around for a while (brown rice and corn) and to leave the sugar out. post baking notes: love the texture. quite the contrast to my clafoutis experiments of late. dry like a shortbread but, of course, not sweat. kind of like a crunchy biscuit. ate a couple outta the oven with butter and will report back on the dehydrated ones later.

Recipe Ingredients for a new rusk (no sugar)

69 g brown rice flour (1/2 cup)
71 g corn meal (1/2 cup)
1 cup whole wheat flour
43 g coconut oil the extra virgin unrefined kind -- very coconutty
107 g low fat milk (1/2 cup)
1 tsp baking powder
1/2 t salt
50 g egg (1)

Recipe Directions for a new rusk (no sugar)

  1. mix dry ingredients

  2. beat egg and milk with a fork

  3. melt coconut oil and add it to egg mixture (but not while it's super-hot -- in fact, don't get it super-hot cause you break the chains of fatty goodness and make carcinogenic things instead)

  4. add to dry ingedients and mic until you can turn it onto a board and knead until it comes together.

  5. well here's the first big discovery in this experiment, I can only assume that brown rice soak up LOTS of moisture cause this dough was wicked dry. hmmm.

  6. it's in the oven at 350 for 25 mins so we'll see what kind of tough heinous baked-good comes out soon.

  7. oh, and in theory, the next step is to put them in the dehydrator to dry them out (adapted from sunday's at moosewood but that's a far cry away -- as in 30 experiments ago)
