Recipe Ingredients for new potato salad

3 teaspoons kosher salt
1 1/2 pounds new potatoes, halved
1/4 cup olive oil
1/2 cup kalamata olives
1/4 cup chopped fresh parsley
1 cup asparagus
1 yellow onion

Recipe Directions for new potato salad

  1. Place the potatoes and 2 teaspoons of the salt in a large saucepan. Add enough cold water to cover. Bring to a boil. Reduce heat and simmer until the potatoes are fork-tender, 20 to 25 minutes. When you have 10 minutes left, add the asparagus.

  2. Drain the potatoes and return them to the pot. Place over medium heat, shaking the pot, just until the potatoes are dry. Set aside. Heat the oil in a large skillet over medium-high heat. Add the chopped onion (or shallot). Add the potatoes and stir to coat with oil. Cook until golden brown, about 5 minutes per side. Add the olives and mint and toss. Season with pepper, lemon zest, and the remaining salt and toss again.
