A hearty "back of town" New Orleans dish that uses potatoes rather than rice for a change.

Recipe Ingredients for New Orleans Shrimp Stew

1/2 cup Gold Medal All Purpose Flour
4 oz Vegetable Oil
1 3/4 cup, chopped Onions, Spring Or Scallions
3/4 cup, diced Celery
4 tsp Garlic
2 1/2 tsp Salt, Table
1 tsp Pepper, Black
1/4 tsp Cayenne
3 leaves Bay Leaves
1 tsp, leaves Thyme, Dried
3 large whole (3" dia) Tomatoes, Red, Ripe
3 cup (8 fl oz) Water
1 teaspoon Juice
16 oz Potatoes cut into 1" cubes
1 lbs Shrimp, Mixed Species

Recipe Directions for New Orleans Shrimp Stew

In a heavy 6-8 quart pot or kettle, heat the oil and gradually stir in the flour. Cook over medium low heat stirring constantly until a nice peanut butter colored roux is formed (about 20 minutes). When desired color is reached immediately lower heat and add the chopped onion, shallots, celery, and garlic. Stir thoroughly and cook over low heat for 10 minutes more, stirring constantly. Add the salt, black pepper, cayenne, bay leaves and thyme and mix well. Add the chopped tomatoes, water and lemon juice, then simmer for 1 hour, stirring frequently. Add the cubed potatoes and simmer for 10 minutes longer. Add the shrimp, cover the pot and simmer over low heat for 25 minutes more.
