Authentic New Mexico Green Chili Stew

Recipe Ingredients for New Mexixo Green Chili Stew

2 tsps olive oil
1 lb pork loin
3 garlic cloves
1 red onion
1 1/2 cup green chilies
2 jalapeno peppers
1 tsp cumin
1/8 tsp salt
1 tsp white pepper
3 cups low sodium chicken broth
2 cups water
2 large potatoes
2 large tomatoes

Recipe Directions for New Mexixo Green Chili Stew

In a skillet heat olive oil over medium heat, sautee pork until all the pink is gone (5 minutes). Put the meat aside and add garlic and oinons and cook until onions start to turn soft. Put pork, onions and garlic into a stock pot, add all of the ingredience except for the potatos and tomatoes. bring everything to a boil and then turn down to a simmer for 1 hour, stir occassionally. add poatoes and let cook for 30 more minutes before adding tomatoes. let cook for 5 minutes and serve.
