Recipe Ingredients for New Mexico Style Flat Enchiladas

1 lb lean ground beef, browned
1 tbsp olive oil
312 g corn tortillas (8 large)
6 cups spinach leaves
1 cup frozen chopped onion
1 1/4 cup enchilada sauce
2 cups shredded cheddar cheese
8 eggs, large, fried over-easy
2 cups canned black beans

Recipe Directions for New Mexico Style Flat Enchiladas

  1. Heat enchilada sauce in small sauce pan, keep warm.

  2. Brown ground beef in small amount of olive oil, add chopped onions and continue heating until onions are tender. Divide into 4 equal portions. Set aside.

  3. In a large skillet, heat about 2/3 cup of olive oil.

  4. Quickly immerse each tortilla in the hot oil about 10 seconds, turning once. Set aside on paper towels to absorb excess oil.

  5. Fry the eggs in the hot oil, being careful not to break the yolks. Drain and set aside.

  6. Assemble each enchilada as follows: Place one prepared tortilla on a plate, top with part of beef mixture portion, add portion of sauce, top with portion of spinach and 1/4 cup shredded cheese. Add second tortilla on top and repeat layers. Finally top with two over-easy fried eggs. Add a small amount to sauce to finish.

  7. Serve with 1/2 cup of black beans on side.
