Kind of a cross between traditional enchiladas and tostadas. Instead of rolling the meat & cheese in tortillas, covering in sauce and baking, you fry the tortillas flat, layer lettuce, cheese and onion and top with enchilada sauce.

Recipe Ingredients for New Mexico Style Enchiladas

20 ounce enchilada sauce
12 ounce tomato sauce, no salt added
1 pound ground beef, 95% fat-free
1/2 tsp cayenne powder
24 corn tortillas, fried crisp
12 cups lettuce, chopped or shredded
24 ounces cheddar cheese, grated
2 large onions, diced

Recipe Directions for New Mexico Style Enchiladas

  1. Brown ground beef, drain.

  2. Place browned ground beef in sauce pan with enchilada sauce and tomato sauce. (Pinto beans may be added optionally.)

  3. Rinse cans with about 4-6 ounces of water and add to pan.

  4. Simmer at least 30 minutes.

  5. Heat 1 cup of oil in a skillet, preferably a cast iron one, and fry the tortillas crispy. Remove and drain on paper towels.

  6. For one serving, place one or two crispy tortillas on a plate.

  7. Layer with one cup of chopped or shredded lettuce, about 3 ounces of grated cheese and about 1/4-1/3 cup of diced onions.

  8. Pour about 1 to 1 1/2 cups of enchilada sauce over.

  9. Crunch tortillas into bite-size pieces for ease in eating.
