1 corn tortilla
1/4 cup cheddar cheese
1 tbls onion
1/4 ENCHILADA SAUCE

Recipe Directions for New Mexico Enchiladas

  1. Fry the egg, while the egg is cooing warm enchilada sauce. Also warm tortilla

  2. when everything is warm, place the tortilla down flat on the plate, with egg on top add onion then enchilada sauce. Top with cheese
