this recipe has two regular eggs and 4 egg beaters--should be a better mix. healthy, but tastier~

Recipe Ingredients for New Improved Combo Frittata

2 medium eggs
1 cup egg beaters
1/3 medium bell pepper, red sweet
2/3 medium bell pepper, green sweet
40 g. onion
1 small potato
30 sprays PAM cooking spray
1.32 oz. Ham, Deli Style, Smoked

Recipe Directions for New Improved Combo Frittata

  1. cut veggies (potatoes extra thin)

  2. roast peppers and onions in oven

  3. "fry" potatoes with PAM (cover at first to steam)

  4. whisk eggs with egg beaters and seasonings to taste (I don't pay attention to sodium)

  5. remove potatoes from pan, let cool, spray with pam again

  6. add potatoes, veggies, chopped ham

  7. pour egg mixture over the top

  8. cook until top almost sets

  9. place under broiler to finish cooking!

  10. enjoy plain or with salsa!
