Recipe Ingredients for New-Fashioned Meatloaf

2/3 cup oats
1/2 cup skim milk
7/10 lb 90% lean ground beef
1/2 cup spinach, chopped
1/4 cup onion, minced
2 large egg whites, lightly beaten
1 tbsp horseradish
2 tsp Italian seasoning
1 tsp Worcestershire sauce
1 clove garlic, minced
1/2 tsp salt
1/3 cup ketchup

Recipe Directions for New-Fashioned Meatloaf

  1. Note: The recipe actually calls for 1lb of lean ground beef, but the analyzer was registering that as 1 lb of cooked ground beef instead of 1 lb or raw beef and it was raising the calorie content.

  2. Preheat the oven to 350 F. Lightly mist a non-stick loaf pan with olive oil spray. Set aside.

  3. In a medium mixing bowl, combine the oats and the milk. Let stand for 3 minutes, or until the oats are slightly softened.

  4. Add the beef, spinach, onion, egg whites, horseradish, Italian seasoning, Worcestershire sauce, garlic, and salt.

  5. With clean hands or a fork, mix well. Transfer the mixture to the prepared pan. Press into pan, patting the top flat.

  6. Spread the ketchup over the top.

  7. Bake for 30 minutes, or until thermometer inserted in center registers 160 F and the meat is no longer pink.

  8. Let sit for 10 min. Cut into slices. Serve immediately
