Delicious clam chowder for a cold winter's night

Recipe Ingredients for New England Clam Chowder

2 oz bacon, diced
1 1/2 cups chopped onion
1 1/2 cups water
4 cups potatoes
1 1/2 teaspoons salt
1 ground black pepper to taste
3 cups half-and-half
3 tablespoons butter
10 oz minced clams

Recipe Directions for New England Clam Chowder

Cut bacon into cubes, fry until crisp. Remove all but 1 tbsp fat, fry onion on medium until translucent, about 5 minutes. Do not brown onions. Add water, potatoes, salt, pepper and clams. Simmer on low until potatoes are tender, about 20 minutes. Add cream and butter, heat through for another 5 minutes.
