Recipe Ingredients for New England Clam Chowder

2 potatoes, medium, diced
12 ounces clam juice
19 1/2 ounces clams, chopped canned
10 ounces clams, whole canned
1 onion, chopped
2 celery stalks, leafy parts included, chopped
2 ounces pancetta or bacon, chopped
2 garlic cloves, large, minced
3/4 cup cream, half & half
1/4 tsp Hot sauce, or to taste
2 tbsp thyme, fresh, chopped
2 tbsp parsley, fresh, chopped
1/4 tsp salt, sea
2 tbsp flour

Recipe Directions for New England Clam Chowder

Cover potatoes with bottled clam juice. Add salt and boil until tender. Sautee bacon, onions, celery & garlic until soft. Spriinkle with flour and stir to combine, do not brown flour. Add juice from canned clams, bring to a boil and cook until thick. Add clams, onion mixture to potatoes. Add thyme, hot sauce, and half & half and bring to a simmer. Check salt and adjust if necessary. Garnish with chopped parsely & black pepper.
