New England Clam Chowder Recipe

Creamy and not as rich as most, with out the usual bacon or pork fat

Recipe Ingredients for New England Clam Chowder

2 cups milk, whole
2 tbs flour
2 tbs butter
1 cup clams, canned, minced
4 ounces clam juice
1/4 cup onion, minced
3 tbs celery, minced

Recipe Directions for New England Clam Chowder

  1. In a heavy saucepot, melt the butter and saute the onion and celery until soft but not brown.

  2. Stir in the flour and cook for 1 minute, stirring

  3. Warm the milk and slowly stir it into the flour mixture

  4. Add the clams and clam juice

  5. Bring up to the boiling point and stir until thickened, but do not boil

  6. Serve hot with a garnish of fresh minced parsley
