Great for group dinners and/or cold winter nights. Pretty quick to make and delicious!

Recipe Ingredients for New England Clam Chowder

1 dozen fresh clams (166 g)
2 medium+slices,+cooked+raw+product+packed+20/lb bacon
2 carrots
3 celery stalks
1 onion
2 large red potatoes
16 ounces cream
1 quart water

Recipe Directions for New England Clam Chowder

  1. Take 1 dozen fresh chowder clams (fist sized) and put them in a big soup pot. Add enough water so it's about 2 inches deep; you want about 1.5 quarts. Bring to a boil then simmer/steam clams for 5-10 mins, until they open.

  2. Remove clams from pot. Reserve all the liquid, save for later. Remove clams from shell, remove muscles (each has 2 on either side). Chop clams, reserve for later.

  3. Chop 6 slices of bacon, add to pot. Sauté until fat is rendered.

  4. Chop carrot, onion and celery, add to bacon in the pot. Add a heaping teaspoon of thyme and salt and pepper. Sweat the vegetables for about 15 mins, cooking slowly without browning.

  5. Add the clam liquid and bring to a boil. Stir and let simmer for about 10 mins.

  6. Chop potatoes and add to the mix.

  7. Take a little soup liquid in a small bowl, add 2 tablespoons flour and mix so it's a paste with no lumps (like for gravy). Stir back into soup pot, bring to a boil, then let it go down to a simmer.

  8. Add cream, stir and let it simmer low for another 10 mins. (don't burn the cream)

  9. Finally, stir in clams to heat them through. Serve with crusty bread and a little red wine...
