New England Clam Chowder Recipe

This is a combination of two recipes, plus some of my own version.

Recipe Ingredients for New England Clam Chowder

4 oz lean bacon, blanched
1 large onion, chopped
2 stalks celery, chopped
5 gram fresh thyme, chopped
1/4 cup parsley, chopped
16 servings fat-free half & half
3 large Idaho potatoes, peeled and diced 1/4"-inch
1/2 cup instant mashed potatoes
16 oz Corn, Sweet, Yellow
3 cans chopped clams
4 cups water
1/4 teaspoon freshly ground black pepper
1/2 tsp sea salt
5 serving Hot Sauce

Recipe Directions for New England Clam Chowder

  1. Blanch the bacon in simmering water for about 5 minutes.Drain. Cool and chop into strips, 1/4"-inch wide. Render the bacon and then drain, leaving the fat in the pot.

  2. Add the diced onions and celery, cook on medium until they become glossy but not browned. Add the seasonings along with the herbs. Cook on medium low heat.

  3. Add the juice from the clams along with water. Add the potatoes, and continue to cook on medium-low until they are done.

  4. Add the half & half, and stir in the instant mashed potatoes, if desired. Bring to a boil, stirring occasionally to allow for even thickness.

  5. Add the Kernel corn and the clams.

  6. Do not boil any longer. Add the Hot Sauce and adjust seasoning, Serve immediately with soda crackers. Yum-yum!
