The Following muffin recipe has been changed an is no longer the recipe by Dot Vartan- However it is the base of the recipe with a change in the sugar content and vanilla yogurt instead of butter, saving about 100 calories per LARGER (can yield 12 muffins) servings. Mad About Muffins: by Dot Vartan New England Banana Muffin- Super high calories. almost 200 per muffin, but really delicious and my family loves them so they are a good splurge every once and awhile. I know you could reduce the calories by using margarine and splenda but we haven't attempted that yet.

Recipe Ingredients for New England Banana Muffins

1 3/4 cup flour
1 tsp baking soda
1/2 tsp baking powder
1/2 c. nonfat yogurt
1 egg
1 teaspoon vanilla
314 g bananas
1/4 cup lowfat milk
1/2 cup maple syrup

Recipe Directions for New England Banana Muffins

  1. Preheat oven to 375 degrees

  2. sift together dry ingredients, flour, baking soda, baking powder, add sugar and mix together.

  3. In separate bowl combine wet ingredients, slightly beaten egg, vanilla, smashed banana, milk and maple syrup and melted butter, mix together until well blended

  4. add wet ingredients into dry ingredients

  5. mix until dry ingredients are just moistened.

  6. Spoon into greased muffin tins- about 2-3 tablespoons per muffin tin.

  7. bake @ 375 for 20 minutes
