Recipe Ingredients for New Cranberry Apple Muffin

1 cup of unbleached flour
1 cup of whole-wheat flour
1/2 cup sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
3/4 cup egg substitute
1 cup unsweetened applesauce
3/4 cup grated carrots
2 teaspoons vanilla extract
1 cup chopped apple
1 cup chopped pear
1/2 cup raisins
1/4 cup of chopped pecans

Recipe Directions for New Cranberry Apple Muffin

  1. In 2 large mixing bowls, combine dry and wet ingredients separately

  2. add dry to wet ingredients, mix briefly and don't overmix

  3. fill muffin tins 3/4 full

  4. bake at 375 degrees F for 20-30 minutes until a toothpick inserted comes out clean
