Tasty but Healthy Russian Borsch - soup

Recipe Ingredients for New Borsch

435 g beef bottom roast
13 cups water
653 g cabbage
4 beef bouillon cubes
438 g potatoes
162 g carrots
2 roma tomatoes
240 g Beets
150 g onion
1/3 cup vinegar
1 tsp sugar
200 g green bell pepper
150 g red bell pepper
15 ounce diced tomatoes
6 ounce tomato paste
2 teaspoons olive oil
2 tsp salt

Recipe Directions for New Borsch

Boil meat in water. Add bouillon. Cook 1.5 hours. Then add cabbage. 5 minutes later add Potatoes. 5 minutes later add 1/2 of grated beets. Then add ingredients from the frying pan. WHat is in the frying pan? In a frying pan - fry grated carrots, grated onions, 2nd half of grated beets in 2 tsp oil. After 5-10 minutes add tomato paste and can of tomatoes(do not drain). Use some of the broth in your frying pan to dilute tomato paste. At this point you can season the mixture as you please (garlic, salt, pepper, sugar, vinegar) I use so much vinegar to make it have a bit of a bite. If you don't like tang to your Borsch, then reduce to however much you like. Add fresh roma tomatoes - diced, 1/2 of green and red pepper. Cook for 5 minutes more. Then add everything from the frying pan into the broth. Cook 5-10 minutes. THen add the other half of the peppers. Cook another 10 minutes. For best results don't plan on eating this until it has sat for at least 24 hours. I promise it will be worth the wait. If your borsch is too sweet at more vinegar. If your borsch turned out too sour add more sugar - they can kind of even the other one out a bit. Check the flavor after a day and add more salt or whatever. You can also use 11 or 12 cups of water instead if you want a really hearty soup.
