Adapted from New American Plate. I made without the tomato paste, and much less broth. Probably could cut out one of the cans of tomatoes as well.

Recipe Ingredients for New American Beef Stew

16 oz Beef, Round, Top Round
1 cup, chopped Onions
4 medium Carrots
1 1/2 cup chopped Leeks
6 clove Garlic
15 oz Whole Tomatoes No Salt Added
1 cup Beef Broth
8 oz Potato, cut into 1 inch cubes
2 cup, chopped Kale
1 tbsp Olive Oil
1 cup green beans

Recipe Directions for New American Beef Stew

  1. Heat the olive oil. Brown the meat in batches.

  2. In the same pot, saute the onions until translucent. remove the onions.

  3. Saute the carrots, leeks, and garlic for about 5 minutes, until slightly tender.

  4. add the beef and onions back to the pot, along with the tomatoes and beef broth.

  5. Bring to a boil, then reduce and simmer for about an hour.

  6. Add potatoes simmer for another 15 minutes, until the potatoes are tender, but not falling apart.

  7. Add kale and green beans. cook for another 6 - 8 minutes until kale is tender.
