Delicious seafood and vegetable mixture served over spaghetti squash. Light and plenty of vegetable servings.

Recipe Ingredients for Neptune Spaghetti Squash

5 cups Spaghetti Squash (medium to large)
1/2 pound of Shrimp
3/4 pound of Bay Scallops
1 cup of Sugar Snap Peas
1 cup of Asparagus
1/2 cup of sun-dried tomatos
1 tbsp of minced garlic
1 tbsp of Olive Oil
1 tbsp of Grated Parmesan Cheese

Recipe Directions for Neptune Spaghetti Squash

  1. Poke holes for ventilation and microwave Spaghetti Squash on High until soft (about 5-6 minutes per pound). (Remove seeds and then use fork to shred sqaush into spaghetti-like texture)

  2. While cooking Squash, sautee oil and garlic in pan until garlic starts to turn golden. Add cleaned and shelled shrimp, scallops, and vegetables to pan. Cook until meat is cooked through. Serve mixture over Squash. Sprinkle a light amount of cheese and serve!
