A good basic red sauce for all pasta dishes. Also makes a great pizza sauce. Freezes beautifully. This recipe makes approximately nine cups.

Recipe Ingredients for Nelle's Red Sauce

2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 tsp salt
1 tsp basil, dried
1 tsp thyme, dried
1 tsp oregano, dried
1/2 tsp black pepper
4 tbsp tomato paste
1 cup wine, red
9 tomatoes, halved
32 ounce canned tomatoes
3 tsp sugar, to taste

Recipe Directions for Nelle's Red Sauce

  1. Sautee onions in olive oil over medium heat.

  2. Add garlic, salt, herbs, and pepper. Mix well.

  3. Add tomato paste and stir well. Tomato paste will turn slighty brown in color.

  4. Add wine to deglaze pan.

  5. Add tomatoes and sugar. Stir, and bring to boil.

  6. Turn heat as low as possible. Cover and simmer 1 to 1-1/2 hours, stirring occasionally.

  7. Remove from heat. Use an immersion blender to puree sauce to desired consistency.

  8. If sauce is too thin, return to low heat and simmer uncovered, stirring occasionally, until sauce reaches desired thickness.

  9. Allow to cool completely prior to refrigerating.
