Delicious Grilled Stuffed Tomatoes

Recipe Ingredients for Neely's Stuffed Tomatoes

1 c rice
2 c chicken stock
1/2 onion, chopped
4 tbsp garlic, minced
4 oz Feta, crumbled (Sun dried tomato and herb is awesome)
3 tbsp flat leaf parsley, minced
3 tbsp green onions, chopped
3 tbsp basil, minced
1/4 c sun dried tomatoes, chopped
8 ripe tomatoes
1/8 c grated parmesan cheese
1 tbsp olive oil
1 tsp garlic salt
1 tbsp salt
1/2 tsp pepper
1 tsp italian seasoning

Recipe Directions for Neely's Stuffed Tomatoes

  1. Saute onion in oil over medium to medium high heat for 2 minutes. Add garlic and rice and continue to cook until rice is slightly toasted, take care not to burn the garlic. Add chicken stock and bring to a boil. Once the stock is at a good boil, cover and reduce heat to low. Cook for 20 minutes. Remove from heat and fluff with a fork.

  2. Core and hollow out tomatoes. Any bits of tomato can be added into the filling if you wish.

  3. Combine cooked rice, cheeses, minced basil, parsley, sun dried tomatoes (any extra bits of tomato) and green onion in a medium bowl. Season with italian seasoning, salt, garlic salt and pepper.

  4. Put filling into tomatoes, drizzle with olive oil and top with a little bit of olive oil.

  5. Grill for approximately 10 minutes over medium heat until heated through, skins begin to split, and cheese is melted.
