Recipe Ingredients for Neely's Red beans and Rice

1 tablespoon vegetable oil
1 cup yellow onion
1/2 cup celery
1 cup bell pepper
3 cloves garlic
1 lb smoked sausage
1 teaspoon dried thyme
5 1/2 cups red beans
4 cups chicken stock

Recipe Directions for Neely's Red beans and Rice

Dice onion, celery, and bell pepper and sautee in oil. Cut sausage 1/4 in. thick and add to veggies. after 5 mins add rub, salt/pepper to taste, garlic, bay leaves, and stock. cook for 1 1/2 hours. Low sodium stock will reduce sodium count.
