Recipe Ingredients for Nectarine cobbler 1/2c serving

1 cup all purpose flour
1/2 cup white sugar
1 1/2 tsp baking powder
2 tsp cinnamon
4 tbsp butter
4 cups nectarines
2 pints fresh raspberries
1/3 c light brown sugar
1 tbsp cornstarch
1 orange (6 g) zest (tbsp)
1 tbsp butter
2 tsp vanilla

Recipe Directions for Nectarine cobbler 1/2c serving

  1. Preheat oven 350. Combine flour, sugar and baking powder. Add the milk and butter and beat until smooth. If batter is thick add 1/4 c water.

  2. In a large pan, combine nectarines (sliced), brown sugar, raspberries, orange zest & juice of same orange, vanilla pod opened and seeds scrapped or 2tsp vanilla extract. Over medium heat cook fruit stirring often until mixture is thickened and bubbly, about 10 minutes.

  3. Pour into an ungreased 13 x 9 glass bakin dish. Spoon the topping over the filling and spread carefully and evenly with a rubber spatula. Sprinkle with coarse sugar.

  4. Bake 30-40 minutes or until topping is lightly golden and tester comes out clean.
