Not too sweet, a very good sort of breakfast muffin.

Recipe Ingredients for Nectarine and Banana Muffins

1/3 c. vegetable oil
1 3/4 c. all purpose flour
1 tsp baking soda
1/4 tsp salt
1/4 tsp allspice
1/2 c superfine sugar
1/2 c almonds, shelled and chopped
6 oz nectarine, peeled and chopped
1 banana, sliced
2 eggs, large
1/3 cup plain yogurt or banana flavored
1 tsp almond extract

Recipe Directions for Nectarine and Banana Muffins

  1. A few notes: The original recipe called for sunflower or peanut oil, I sprayed the pan and substituted vegetable oil in the recipe. I used 2 nectarines but I could barely taste them in the finished muffin. Try 3 for more nectarine flavor. I found the almond extract a bit overwhelming. If you aren't a fan of almond try vanilla or banana extract instead.

  2. Preheat oven to 400. Oil a 12 cup muffin tin or use paper liners.

  3. Sift the flour, baking soda, salt and allspice into a mixing bowl. Add the superfine sugar and chopped almonds, mix.

  4. In a separate bowl, mash the banana and nectarine together, then stir in the eggs, oil, yogurt and extract. Add the fruit mixture to the flour mixture and gently stir to combine. Do not over stir the batter or the muffis will be dense. It's okay if the batter is lumpy.

  5. Divide the batter evenly among the 12 cups of the muffin tin. Transfer to the oven and bake 20 minutes or until risen and golden. Remove the muffins from the oven and serve warm or place them on a cooling rack and let cool.
