A traditional Aztec beverage, one of many variations on maize gruel. Similar to atole. Raw maize is larger than corn and can usually be found at large supermarkets or stores catering to a Hispanic market.

Recipe Ingredients for Nechillatolli

8 oz water
6 oz maize
2 tbs lime juice
2 tbs honey
1 tbs sugar

Recipe Directions for Nechillatolli

  1. Cook maize in water until softened.

  2. Ground maize (using a traditional mano and metate, a moljcajete, or motar and pestle) and cook to thicken.

  3. Add honey (or substitute agave nectar) and sugar midway through cooking process.
