Recipe Ingredients for Nawabi Chicken

1/4 pint plain yogurt
1 salt
10 g chilli, dried
3 lbs skinless chicken pieces
4 oz coconut, creamed
2 onions, sliced
4 garlic cloves, sliced
12 oz water
2 oz ghee or butter
1 tsp caraway seeds
2 hard-boiled eggs, sliced
1/2 tsp turmeric
3 oz cashew nuts
1 tbsp fresh ginger, finely sliced
1 tsp garam masala
1/2 tsp paprika

Recipe Directions for Nawabi Chicken

  1. Step #1 Cut each chicken joint in two.

  2. Step #2 mix together the yogurt & tumeric till smooth.

  3. Step #3 Mix the chicken with the yogurt & leave to stand overnight.

  4. Step #4 In a mixer process the garlic, ginger & red chillies with 2 tbsp water till smooth.

  5. Step #5 Melt the ghee(or butter) ina pan over med-heat/flame & fry the onions till golden.

  6. Step #6 Remove onions from pan,pressing them against the side of the pan to save as much ghee as possible.

  7. Step #7 Fry the caraway seeds & garam masala for 30 seconds & add all of the garlic/ginger mix, stir.

  8. Step #8 Add the chicken & the yogurt it was marinaded in, with the onions & the salt & fry for 5 miins.

  9. Step #9 Add 9 fluid oz of the water & creamed coconut, bring to the boil, reduce the heat cover the pan & let simmer 40 mins.

  10. Step #10 In the mixer put the remaining water & th cashew nut & mix till smooth.

  11. Step #11 Add this to the pot & cook uncovered for 5 mins.

  12. Step #12 Serve sprinkled with the paprika & garnished with the eggs.
