Adapted from Alton Brown's _I'm Just Here for the Food_. Alton makes it with 4 cups of chicken stock. I think beans are tasty with just water. I've also reduced the original amount of added salt by 50%.

Recipe Ingredients for Navy beans, vegan, low-sodium

1 lb navy beans, dried
4 cups water
1 T extra virgin olive oil
2 T garlic, sliced
1 T fresh rosemary
1/2 cup carrots, diced
3/4 cup onion, diced
1/2 cup celery, diced
1 tsp kosher salt
1 Freshly ground black pepper to taste

Recipe Directions for Navy beans, vegan, low-sodium

  1. Soak beans overnight in six cups of water.

  2. Drain beans.

  3. Heat oven to 250-degree oven.

  4. Put beans and 4 cups of fresh water into an oven-proof dutch oven and bring to boil.

  5. Heat olive oil in saute pan and add garlic. Cook until brown. Add rosemary for a few seconds.

  6. Add garlic and rosemary to bean pot.

  7. Add carrots, onion, celery, salt, and pepper.

  8. Put lid on pot and place in oven for 1 1/2 hours.
