1 pound dried navy beans, 1/2 cup onion; 2 quarts water; 2 teaspons salt; 2 cloves garlic; 2/3 cup carrots; small can (14.5 oz) diced tomato; 1 veg bouillon cube; 1 c frozen spinach; 1 tblspn olive oil; 1 tbls balsamic vinegar

1 pound dried navy beans
1/2 cup chopped onions
2 quarts water
2 teaspoons salt
2 cloves garlic
2/3 cup chopped carrots
14 1/2 ounce stewed tomatos
1 vegetable bouillon cube
1 cup frozen spinach
1 tablespoon olive oil
1 tablespoon balsamic vinegar

Recipe Directions for Navy bean stew

  1. Simmer beans with onions, garlic, salt, veg bouillon and carrots until tender.

  2. Add spinach, tomatos, oil and vinegar and simmer for ten minutes more.
