Recipe Ingredients for Navy Bean Soup

1 lb. navy beans
8 cups chicken broth, low sodium, healthy choice
6 oz canadian bacon
1 onion
1/2 teaspoon sugar
2 cups celery
2 cup carrots
1 tablespoon olive oil

Recipe Directions for Navy Bean Soup

  1. Pour beans into soup pot

  2. Pour 8 cups of water over them.

  3. Bring to boil for 2 minutes

  4. Let rest off heat for 1 hour

  5. Drain and rinse; place back in pot

  6. While beans are resting, pour oil into saute pan.

  7. Add chopped onions, bacon, celery carrots and 1 cup of chicken broth. This can be done ahead and refrigerated.

  8. Allow to saute on low heat to meld the flavors

  9. Add this mixture to the drained beans

  10. Cover, reduce heat and allow to simmer for 4 - 5 hours.
