Grandma Woodruff would always make this soup with the leftover ham bone after Easter. The calories are really estimated, because this site doesn't have a good equivalent for a ham bone. Grandma's recipe uses about half as many beans and 6 cups of water.

Recipe Ingredients for Navy Bean Soup

1 lb. navy beans
1 c. celery
1 c. onion, chopped
1/4 c. carrot, chopped (optional)
1 1/2 T butter
1 1/2 T flour
1 1/2 lb. ham, bone-in
8 cups water

Recipe Directions for Navy Bean Soup

  1. Soak beans overnight in 6 cups cold water OR use quick soak method - boil in 6 cups water 2 minutes then remove from heat and allow to stand, covered, for one hour. Either way, drain the beans before proceeding.

  2. To soaked beans, add: water, ham bone, celery, onion, carrots.

  3. Cook several hours (simmering nicely) - 2-4, until beans are tender.

  4. Thicken soup with butter and a flour paste made with water and flour.
