With the national pumpkin shortage showing no signs of dissapating, and my son screaming for pumpkin pie, I found & adapted this recipe. Not too bad, a little higher on the calories than pumpkin, but slam dunk on vitamins and fiber. And does not taste in the least bit "beany".

Recipe Ingredients for Navy Bean Pie

1 prepared pie crust
1 c dry navy beans
10 oz sweetened condensed milk (fat free)
1/2 cup Splenda
2 t cinnamon
1/2 t ginger
1/4 t cloves
1 1/2 eggs
1 t vanilla
1 pinch salt

Recipe Directions for Navy Bean Pie

  1. soak beans over night

  2. Cook till tender

  3. Preheat oven to 450

  4. Puree with no water in food processor till smooth.

  5. Add remaining ingredients, blend well

  6. Pour into prepared pie crusts

  7. bake at 450 for 15 minutes

  8. reduce heat to 350 and bake additional 50-55 minutes.

  9. pour into prepared crust
