Recipe Ingredients for Navy Bean, Barley & Veggie soup

2 stalks celery, with leaves
2 med. onions
2 carrots
2 c. navy beans
1 c. pearled barley
1 zucchini (chopped)
1/2 head cabbage
3 potatoes
1 tsp. pepper
1 tsp. garlic powder
2 vegetable bouillon cubes
1/2 tsp. poultry seasoning
1 tbsp liquid smoke
12 c water

Recipe Directions for Navy Bean, Barley & Veggie soup

  1. Soak beans overnight, drain

  2. put beans in pot with liquid smoke, water, onions, celery, carrots and mushrooms.

  3. Season with pepper, garlic, veggie cubes, poultry seasoning.

  4. Let simmer 3 to 4 hours (until beans are tender).

  5. Add ANY OTHER VEGETABLES in addition to the ones listed above and cook for 30 minutes.

  6. Add 1 cup of barley and cook until tender.

  7. If broth too thin, add more barley. If too thick, add more water.
