Roasted vegetable stew in a hot and smoky mole-type sauce (includes 1 tbsp chipotle peppers)

Recipe Ingredients for Navajo Stew

2 sweet potato
2 green peppers
1 large onion, sliced
4 garlic cloves
2 tbsp olive oil
1 tbsp cumin
1 tsp salt
1/4 tsp pepper
15 ounce tomatoes
15 ounce beans

Recipe Directions for Navajo Stew

  1. pre-heat oven to 450

  2. Peel sweet potatoes and cut into 1-inch cubes

  3. Stem and seed peppers and cut into 1-inch peices

  4. Peel the onion and cut it stem end to root end into thin wedges

  5. In a bowl, toss the vegetables with the garlic, oil and cumin, salt and pepper.

  6. Spread on the prepared baking sheet and roast in the over for about 10 min

  7. Stir and contiue to raost for another 10 to 15 minutes until the weet potaoes are tender but not mushy

  8. While the veggies roast, puree the tomatoes and chipotles in a blender until smooth.

  9. When the veggies are tender, put them inot a 2-3 quart baking dish, stir in the tomatoe sauce and the beans and return to the oven until hot (aprox 10 min)
