A nice fluffy flat bread made by the Navajo peoples to eat their food with. Similar to Naan, or Ethiopian flat bread, it is used to pick food up to eat as well as mopping up soups.

Recipe Ingredients for Navajo Flatbreads

5 cup Gold Medal Better for Bread Flour
1 tsp Salt, Table
1 oz Baking Powder
0.33 cup Olive Oil
0.67 cup (8 fl oz) Water

Recipe Directions for Navajo Flatbreads

  1. Mix your flour, salt, baking powder (2 heaping Tablespoons), and herbs or spices (if desired you may add 1 teaspoon dried herb or spice)

  2. in a large bowl, using a fork. Make a well in the center, then pour

  3. in the olive oil and about 2⁄3 cup of warm water. Use the fork to

  4. gradually bring in the fl our from the edge of the bowl, and add

  5. another splash of water if you think it?s too dry. Once it starts

  6. to combine, wet your hands and use them to really bring it all

  7. together until you have a nice ball of dough. Dust your hands and a clean worktop with fl our and knead the

  8. dough with your hands until it is smooth and elastic. This will

  9. take 5 to 10 minutes. Pop the dough back into the bowl, dust it

  10. with a bit more flour, then cover and leave to relax.

  11. Divide your dough into 10 equal-sized balls, then lightly oil your

  12. hands and squeeze each ball between your palms to flatten it

  13. slightly. Dust with a little fl our as you go, and pat and slap the

  14. dough from the palm of one hand to the top of the other. Turn

  15. and twist the dough about in a circular movement as you go and

  16. keep slapping from hand to hand ? each flatbread should be

  17. about inch thick. You?ll probably mess up a few, but practice

  18. makes perfect.

  19. Normally the flatbreads are cooked as you?re making them. You

  20. can do this on a grill or in a nonstick frying pan on a medium

  21. heat. Cook them for a few minutes on each side and check the

  22. underside ? you want them to puff up with a nice bit of golden

  23. color. Keep them warm in a basket covered with a dish towel until

  24. you?re ready to serve them.
