Natural Bran Muffins Recipe

Low fat, high fibre muffins. I also like to add cinnamon for a different flavour. Obviously, you can add dried fruits or nuts, but that will alter the nutritional values accordingly.

Recipe Ingredients for Natural Bran Muffins

2/3 cup unsweetened applesauce
2 eggs
1/2 cup brown sugar packed
2/3 tsp salt
2.36 g Pure Vanilla Extract
1 cup skim milk
75 g Natural Wheat Bran
1 cup all purpose flour or 1 cup + 2 Tbsp Cake & Pastry flour
1 1/2 tsp baking powder
1/2 tsp baking soda

Recipe Directions for Natural Bran Muffins

  1. Preheat oven to 400 degrees Farenheit

  2. Spray a 12 cup muffin tin with a non-fat spray.

  3. In a bowl whisk flour, baking powder and baking soda together.

  4. In a larger, separate bowl, cream sugar, eggs, vanilla and salt together.

  5. Add the applesauce and milk. Mix. Add the bran and mix again. Add the other dry ingredients to the wet mixture.

  6. Stir just until moistened.

  7. Quickly spoon/scoop the batter evenly between the 12 prepared muffin cups.

  8. Place the pan in the centre of the preheated oven. Bake for 18-20 minutes. (Check after 15 mins. and if browning too quickly you may need to turn the oven down to 370 for the last few minutes - depends on your oven.)
