Super healthy crunchy rice salad, good with meats or fish as a side dish. Based loosely on the salad served at the Native American Museum at the Smithsonian. Use either brown or wild rice.

Recipe Ingredients for Native American Rice Salad

3 cups cooked brown rice
1/2 cup walnuts
1/2 cup slivered almonds, toasted
1/4 cup red onion, finely chopped
2/3 cup raw carrot, finely chopped
2/3 cup raw red pepper, finely chopped
1/2 cup dried cranberries
1/2 tsp freshly ground black pepper
1/4 tsp. garlic powder
2 tbsp. olive oil
1 tbsp. rice vinegar
1 tbsp. balsamic vinegar
2 tsp. honey

Recipe Directions for Native American Rice Salad

  1. Mix all ingredients together and dress with:

  3. Vinegars

  4. Pepper

  5. Garlic, either fresh or dried

  6. and Honey

  7. Mix thoroughly, and allow to stand a couple of hours before serving.

  8. Serve cold
