Recipe Ingredients for Native American Fried Squash Bread

1 1/2 cups cornmeal
2 cups summer squash, diced and cooked
2 eggs
1/3 cup buttermilk
2 tbsp butter

Recipe Directions for Native American Fried Squash Bread

  1. Cook squash in UNsalted water until tender. Drain, reserving cooking liquid.

  2. Combine cooked squash, cornmeal, eggs, and buttermilk in mixing bowl. Add cooking water a little at a time until mixture is of thick pancake consistency.

  3. Heat iron skillet over medium heat. Brush with some of the butter. Drop batter onto hot butter with large spoon, making cakes about 3" in diameter. Cook until golden brown, then flip and cook the other side.

  4. This recipe can work one of two ways. You will either get a pancake-type batter, or a biscuit-type dough, depending on the type of squash you use and how much liquid you add. If you get the dough, make little 3" patties about 1/2" high and cook as for griddle biscuits.
