Spanish custard dessert - hot or cold

Recipe Ingredients for Natilla

3 egg yolks
1/2 cup sugar
6 1/2 tbsp flour (50 grams)
1/2 t vanilla extract
2 cups milk, 2%
2 oz hazelnuts, blanched
3 oz brandy

Recipe Directions for Natilla

  1. Blend egg yolks, sugar and flour into a small bowl

  2. Grind the hazelnuts and set aside.

  3. Slowly heat milk in a medium size pan to boiling. Add vanilla.

  4. Slowly beat small amount of hot milk into egg mixture. When egg mixture is warm, whisk into remaining milk in the pan. Stir over low heat as mixture thickens. Slowly add half the brandy and the nuts. Taste and add brandy to taste.
