From Real Simple Real Life I haven't tried it yet. I added the broccoli to the recipe. Maybe cook it separately (steam for 7 minutes) then add to the dish near the end so it isn't over cooked.

Recipe Ingredients for Nathan Lyon's Stovetop Chicken ?Casserole?

2 T butter
1 medium onion, finely diced
1 1/2 c mushrooms, sliced
8 oz chicken breasts, evenly cubed
2 T flour
1 1/2 c whole milk
1/2 cup Gruyere cheese
1 T fresh tarragon, chopped
1 T fresh flat-leaf parsley, chopped
1/4 t Kosher salt
1 freshly ground pepper to taste
16 oz broccoli

Recipe Directions for Nathan Lyon's Stovetop Chicken ?Casserole?

  1. In a large sauté pan over medium high heat, add the butter and sauté until the foam subsides and the butter begins to brown.

  2. Add the onions, mushrooms, broccoli, salt, and a few cranks of pepper, then toss to coat.

  3. Cook, stirring occasionally, until the onions are transparent, for 7 minutes.

  4. Turn the heat to high, add the sliced chicken, and stir to combine.

  5. Dust the mixture evenly with the flour, toss to coat, then cook, stirring occasionally, for 2 additional minutes.

  6. Slowly drizzle the milk over the chicken mixture, stir to combine, and bring to a simmer.

  7. Lower the heat, add the cheese, the tarragon, and the parsley and stir to combine.

  8. Cook until the sauce thickens, about 2 minutes, and season to taste.

  9. Serve with brown rice, egg noodles, or steamed vegetables, if you wish.
