Recipe Ingredients for Narsai David's Vegetarian Lentil Corn Soup

1 cup lentils
1 tbs olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 tsp chili pepper flakes
4 cups water
1 tsp sugar
2 tbs red wine vinegar
3 tbs low-sodium soy sauce
2 cups diced tomatoes
1 ear corn, scraped
1/2 tsp cumin seed
1 small red bell pepper, chopped
1/2 cup cilantro, coarsely chopped

Recipe Directions for Narsai David's Vegetarian Lentil Corn Soup

  1. Drop lentils into a pot of boiling water. Boil for 2 minutes, then remove from heat and cover to rest for 30 minutes.

  2. In a separate pot, heat the oil and sauté the onion over medium heat until well browned. Stir in garlic and chili and stir-fry for a minute. Add the water.

  3. Drain the lentils and discard the liquid.

  4. Add the lentils to the pot along with the sugar, vinegar, soy sauce, tomatoes, corn, cumin and bell pepper. Simmer, covered until lentils are tender, about 15-20 minutes. Sprinkle each bowl with chopped cilantro.
