Napoli Sphaghetti Recipe

Was taught this recipe by a close friend while living in Italy. They use bacon sometimes instead of the ham because of cost. The "Most Basic" recipe version is noodles, bacon and eggs blended and Parmesan Cheese on top -- inexpensive and fills you up.

Recipe Ingredients for Napoli Sphaghetti

8 ounces Spaghetti
2 ounces Prosciutto Ham, sliced
1/4 cup Olive Oil
1 ounce Green Onion, chopped
4 tbsp Parmesan Cheese
1 tsp Garlic, minced
1 ounce Mushrooms, Baby Portabello, chopped
2 eggs, blended

Recipe Directions for Napoli Sphaghetti

  1. Chop up mushrooms and green onions. Sautee in small pan with garlic and 1/2 tbsp Olive Oil.

  2. Slice Prosciutto Ham into small strips and add for a few seconds to sauteed vegetables -- tends to stick together and this gets it to seperate.

  3. Place eggs in a small bolw and wisk together until blended.

  4. Cook spaghetti per directions, drain and add a tsp oil mix quickly.

  5. In a large bowl add the noodles (need to still be hot), vegetables, ham and raw eggs. Toss toghether, heat from noodles will cook eggs onto other ingrediences. Add in small amount of Parmesan Cheese as you toss.

  6. Serve with Parmesan Cheese on table, salt or pepper to taste.
