Butterflied, pan-fried chicken breast smothered in a spinach, tomato, artichoke ragout.

Recipe Ingredients for Naples Chicken

1 Chicken Breast, fried
3 Roma Tomatoes
1 Artichoke Hearts, canned
4 oz spinach, canned
1 tsp red wine
1 clove garlic
1 tsp rosemary
1 tsp oregano
1 tsp basil
1 tsp black pepper

Recipe Directions for Naples Chicken

  1. add red wine, garlic, rosemary, oregano, basil and black pepper to saucpan, turn on simmer

  2. immediately chop tomatoes and add to wine/spice mix

  3. add spinach and artichoke hearts, cover and simmer 1-2 hours

  4. pan-fry chicken breast in olive oil, top with sauce and serve
