A tomato based, ground beef goulash with lots of fresh veggies and savory spices.

Recipe Ingredients for Nanny's Goulash

16 ounces 93% lean all natural ground beef
1 package (10 oz) Spinach
1 cup, chopped or strips Peppers, Sweet, Green
1 large Squash, Summer, Zucchini, Includes Skin
1 medium (2-1/2" dia) Onions
1 cup Crinkle Cut Carrots
1 cup Corn, Sweet, Yellow
14.5 oz Tomatoes
0.5 tsp Paprika
0.5 tsp, ground Basil, Dried
1 tsp Garlic Powder
0.5 tsp Pepper, Black

Recipe Directions for Nanny's Goulash

  1. In a large skillet, brown the ground beef. Remove beef with a slotted spoon and discard fat (Use 93% lean and you will have next to no grease). Return skillet to stove, heat olive oil over medium-high heat (I used a wok and left out the olive oil entirely for calorie sake). Stir in spinach, green peppers, squash, onion, corn, carrots, paprika, basil, garlic salt, and pepper; cook for five minutes, stirring occasionally.

  2. Reduce heat to medium. Stir in beef and tomatoes; simmer about 20 minutes, stirring occasionally.
