Recipe Ingredients for Nanna's Mexican Casserole

4 oz raw Beef Stew Meat
9 tortillas Yellow Corn Tortillas
1/2 medium, diced Green Bell Pepper
1/2 cup, diced Celery
1/4 cup Rice, White, Short-grain, Cooked
1/2 large, diced Onions
5 oz Enchilada Sauce
10 oz Ground Turkey, 93% Lean
8 oz Refried Beans, Traditional
4 dash Pepper, Black
1 tsp, leaves Thyme, Dried
1/2 cup shredded Mexican Cheese

Recipe Directions for Nanna's Mexican Casserole

  1. In a large pot cook the ground turkey, stew meat and onion until almost done. Add the green pepper and celery and cook a few minutes more. Add the sauce and spices and mix it well.

  2. In a baking pan layer the tortillas, rice, refried beans and the meat mixture. Top with the shredded cheese.

  3. Bake at 350 for 25-30 minutes.
