Recipe Ingredients for Nancy's Italian Stuffed Peppers

5 green bell pepper
16 oz groundchicken breast
16 oz lean ground beef
1/2 c onion, chopped
1 c egg whites
2 T oregano,dried
2 T basil, dried
1 t garlic
1 c oatmeal
2 T milled flax seed

Recipe Directions for Nancy's Italian Stuffed Peppers

  1. Clean and half the peppers, set on towel to dry.

  2. Add eggs to bowl, whisk. Add oatmeal, cheese and spices, mix well.

  3. Add meat , mix well, I use my hands. This is about the same as meatballs or meatloaf.

  4. Put 3 oz meat mixture into each pepper half.

  5. Mist a casserole dish with olive oil. Arrange peppers meat side up.

  6. Bake in 350* oven for 30 minutes.

  7. Add pasta sauce of your choice, covering the peppers. ( I usually drain off any excess liquid- first.)

  8. Bake another 10 min or so. Remove from oven and sprinkle with whatever amount and kind of shredded cheese you like.

  9. Serve over pasta or spagetti squash.
