A lowfat version of my favorite Caesar salad

Recipe Ingredients for Nancy's Caesar Salad

1 head romaine lettuce
2 cloves garlic
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
4 tablespoons canola oil
1 1/2 tablespoons red wine vinegar
6 tablespoons parmesan cheese
1/2 cup croutons

Recipe Directions for Nancy's Caesar Salad

  1. Wash lettuce and cut or tear into bite size pieces. Place in colander to dry.

  2. Cut garlic into small pieces.

  3. Put garlic, salt, and oil in blender.

  4. Blend for 30 seconds.

  5. Place lettuce in salad boil, and pour oil and garlic mixture over salad retain any large garlic chunks.

  6. Add red wine vinegar to blender, and blend with remaining garlic chunks for 30 seconds.

  7. Pour over lettuce.

  8. Add parmesan cheese, croutons, and pepper.

  9. Toss salad and serve.
